Happy Drinking! Rhubarb Margaritas

Things that are good: Long weekends, Summer nights & lots of margarias…
After taking a spin with lime, cherry and strawberry – I thought it might be good to breakout of the usual routine and try a more exotic fruit. When my parents suggested rhubarb margaritas over the weekend, I couldn’t refuse…
Bonus: They are delicious!
Rhubarb Margaritas
Rhubarb syrup
6 stalks rhubarb (chopped)
3 cups water
2 1/4 cup sugar
Boil for 20 mins. Let cool. Blend. 
Pour the following in pitcher over ice:
1 cup tequila
1 cup lime juice
1 cup rhubarb syrup
2 oz Cointreau 
 
And viola! Don’t these looks pretty good? They take a little work, but it’s totally worth the wait. Let me know if you give them a spin this summer!
