As a self proclaimed cocktail connoisseur, I’ve rarely met a cocktail ingredient I haven’t tried over the years. But for some reason, I’d never made {or even had!} a Pimm’s cup, one of the most delicious and refreshing summer cocktails {spoiler alert: I made a BIG mistake!}
Now that I know the error of my ways {and how crazy easy it is to whip them up}, I’ll be making these bad boys all summer long. To give you a little history of the Pimm’s cup, according to the New York Times, the drink was named after bar owner James Pimm who invested the drink in the mid-1800’s. By the 1860’s, everyone was having a Pimm’s Cup party and the Pimm’s company started to bottle it themselves. The most popular version was the No.1 {which you’ll see in the recipe below} which is a reddish tonic with citrusy and bitter notes. And believe me if you haven’t tried it, it’s delicious!
A basic Pimm’s cup is pretty straight forward and made with Pimm’s, lemonade, lemon soda or ginger ale {whatever you’re into} and served with ice and a cucumber. My recipe below is pretty similar, but I added a little extra flair to make it more fun! Ready to get on the party wagon with me? Let’s do this – Pimm’s cup style!
Here’s what you’ll need to make a quick and refreshing Pimm’s cup:
• 1 ½ ounces Pimm’s No. 1 {ordered from Drizly}
• 3 ounces ginger ale
• ½ ounce gin {I used Beefeater from Drizly}
• Mint, for garnish
Directions:
Fill a highball glass with ice. Add Pimm’s to your cup and then top with ginger beer and a little muddled cucumber {if you’re feeling fancy!} To top your drink off, garnish with an unpeeled cucumber slice and mint sprig.
