It’s no secret that margaritas are by far my favorite cocktail, and whenever the clock hits 5 o’ clock on a Friday, I’m instantly craving a margarita in one hand and tacos in the other {totally normal, right?}. And if I have to choose my absolute favorite margarita, it will always be this delicious rhubarb one that my dad lovingly whips up for me when I come back home to visit in the summer. Best dad ever? I think so!
I’ve long been a lover of tangy and sweet rhubarb, and my parents always grew it in our backyard when I was growing up. Whether it was added to a strawberry pie, a crisp or coffee cake – rhubarb season was always one of my favorite times of the year. Now that I’m a self-proclaimed margarita connoisseur, my favorite rhubarb recipe has shifted to this amazing margarita made with fresh lime juice and rosemary. If you happen to love margaritas half as much as I do, this recipe is bound to become one of your new faves too!
What you need to make 1 pitcher:
• 6 ribs of fresh rhubarb
• 2 cups sugar
• 1 cup tequila {I used El Jimador Silver from Drizly}
• 1 cup fresh lime juice
• 2 oz. Grand Marnier
Directions:
For the rhubarb purée: Chop 6 ribs of rhubarb and place in a saucepan with 2 cups of sugar and water. Simmer for 20 minutes and let cool for 30-45 minutes. Once your mixture is cool, blend until smooth.
For a the cocktails: In a pitcher filled to the top with ice, pour 1 cup tequila blanca, 1 cup fresh lime juice and 1 cup of the rhubarb purée. Add 2 oz. of Grand Marnier and mix together. In individual margarita glasses, add a fresh spring of rosemary for garnish.
One sip and you’ll be in margarita heaven – believe me, it’s really that good! If you’re a serious margarita lover, you’ll have to give it a try! xx
