On January 1st every year, everyone thinks they’re going to kick ass and take names on their new years resolutions, but by mid-March everyone’s scrambling to find that napkin they scribbled their resolutions on. The struggle is REAL my friends – and if you happen to be in the minority of people who still remember your laundry list of resolutions – hats off to you! But for the rest of us, we definitely need the perfect breakfast recipe {aka, delicious DOVE® Chocolate Fruit & Nut granola bars!}
I don’t know what happened – but the last few weeks I’ve been really tying to get my butt in gear. I’ve been falling behind on life {and dealing with all the anxiety of feeling like I’m failing!} and now I’m playing a mad game of catch up which means late nights, early mornings and kinda failing at eating at regular hours.So I decided the least I could do was give myself a breakfast to kick-start my day – and a snack whenever I feel like I’m about to lose it. And while I love eating potato chips and candy as much as the next gal, I’ve been trying to keep my self in check{ish} when it comes to food. Enter these granola bars, made with toasted oats, honey, nuts and topped with chocolate covered DOVE® Dark Chocolate Blueberry & Vanilla Cashew, DOVE® Dark Chocolate Cranberries and DOVE® Dark Chocolate Raspberry & Honey Roasted Almonds.
It’s kinda like a party in your mouth – and if you don’t believe me, you can ask my co-workers who devoured them all in a day {thanks for your help, friends!} I’d been eyeing these bad boys up in the Wal-Mart aisle ever since they came out earlier this month since they seemed to be the perfect sweet snack I don’t have to feel guilty about. I bought the whole cranberry as well as the raspberry and toasted almonds and they were perfect on top of these tasty granola bars.These seriously tasty no-bake granola bars are super simple to make and are delicious to boot, so let’s chat the recipe! Here’s what you’ll need to make these bad boys:
Granola Ingredients:
• 2.5 cups rolled oats
• 1 cup coconut flakes
• 1cup sliced almonds
• 1 cup varied seeds and dried fruits {I used chopped raisins, slivered almonds, and sunflower seeds}
• DOVE® Dark Chocolate Raspberry & Honey Roasted Almond
• DOVE®Dark Chocolate Cranberries
Adhesive Ingredients:
• 1/3 cup honey
• 1/4 cup salted butter
• 1/4 cup dark brown sugar
• 1 teaspoon vanilla extract
Directions:
• In a baking pan covered in aluminum foil, toast all your dry ingredients (excluding the chocolate covered fruit and nuts!) at 350 degrees for about 7-10 minutes. Keep an eye on your oats as over temperatures vary!
• Once toasted, let the dry goods cool for a few minutes before placing them into a bowl for mixing later.
• Combine your butter, honey, brown sugar and vanilla extract into a saucepan over medium heat, stirring occasionally. Cook the mixture until the butter melts and the sugar is dissolved.
• Pour your liquid mixture over the dry oats in a bowl, and mix well. Let the mixture cool for a few minutes to combine.
• Place your oats mixture on a wax paper baking sheet or pan and use a rubber spatula to evenly layer.
• Place your DOVE® Chocolate Fruit & Nut goodies on top, giving each bar a good amount of chocolate goodness 😉
• Let your pan and mixture cool for about 15 minutes before cutting and enjoying! And voila! You’ve mastered the art of no-bake granola bar-ing. There perfect to have on hang for a crazy week, or to bring to your co-workers for some serious brownie points.
