Girls days are the best days, aren’t they? With the hustle and bustle of life, sometimes it’s nice to kick back with your favorite girlfriends and pour yourself a big glass of champagne. And if you’re feeling extra fancy – why not add in a few scoops of ice cream to make a champagne float? Plus if you add low calorie ice cream, it’s basically like eating a salad, right? At least, that’s what I like to tell myself 😉
Last weekend was the perfect balance of relaxing, exploring and spending time with a few of my favorite people. On Sunday I spent the afternoon with Kit and we whipped up some easy and seriously delicious strawberry champagne floats with Halo Top ice cream. If you’ve heard all the hubbub about Halo Top ice cream {a delicious ice cream brand that makes pints under 300 calories!} the rumors are true – it’s delicious and not as ridiculously indulgent as other kinds of ice cream. Plus, everything’s better paired with champagne so you really can’t go wrong.
Kit and I caught up over champagne, watched the Hamilton drunk history episode {which is epic if you haven’t seen it yet} and ate some of the delicious food she was shooting for her blog – how lucky am I to have a food blogger friend who feeds me?! Sometimes a little girl time is exactly what you need to feel rejuvenated and energized. Sure, guys are awesome – but a gal needs some serious girl time every once in awhile to balance it out 🙂 If you’re looking for a super easy, delicious cocktail to whip up next time you have your favorite girlfriends over, give these Strawberry Champagne Floats a try!
What You’ll Need:
• A bottle of champagne – I ordered my favorite, Veuve Clicquout from Drizly
• Strawberry ice cream or sorbet. I used Halo Top’s strawberry ice cream since it’s delicious and low calorie!

Speaking of weekend, I’m so excited we have a three day weekend – yay! I’ve been trying to simplify my life in 2017, and while it’s been mostly working I really need to do a serious job uncluttering my apartment and really going through everything in my home – including my currently overflowing closet. My mom graciously volunteered to come to Chicago and help me organize my life, so I’m excited to spend some mother daughter bonding time together, and do a serious overhaul of my closet. Thankfully my mom likes organizing much more than I do, so she’ll be quite a help 😉
