Friends, it’s FINALLY here! Thanksgiving is right around the corner and I couldn’t be more excited to spend some time with the family after a few crazy weeks. But before I kick off the traditional Thanksgiving festivities, I’m excited for a little friendsgiving celebration later this week. As the world’s worst cook {believe me, it’s a title I’ve given to myself} I always get a little nervous when it comes to bringing anything to serve my friends because I usually fail in the cooking department. Sure, I want to be a good cook but when I’m a busy working gal, cooking is the last thing on my mind. Most nights I call SkinnyPop and white wine – no shame in that game!
So when PRE brands challenged me to whip up a little friendsgiving recipe with their delicious grass fed beef, I was a little hesitant to say the least – BUT I decided if there’s anytime to learn how to make a tasty appetizer, the time is right before friendsgiving!
With the help of my sweet boyfriend {and cooking sensi} Jimmy, we whipped up this delicious beef appetizer that will satisfy all your friendsgiving cravings. Follow the steps below to give this quick friendsgiving recipe a try for yourself!
Pan-Seared Steak and Pesto Toast:
What You’ll Need:
• 1 PRE Brands Beef Ribeye Steak
• I block soft cheese {I used a soft pepper jack}
• Pesto {I used homemade that I’d previously froze, but store bought works great too}
• Sliced french bread
Instructions:
Take your PRE-brands beef ribeye steak and season it with salt, pepper, garlic and a paprika. Take out a medium pan and sear the fillet on both side at high heat with a dash of olive oil. Cook until medium rare so the meat is tender when sliced.
Cut your french loaf into slices and brush olive oil on the top. Place your toasts on a baking sheet and cook in the oven for about 8-10 minute at 350 degrees. Take the toasts out once they start to get golden and place a slice of cheese on each toast. Put the toasts back in the oven and cook for another 2-3 minutes.
Once the toasts are finished cooking, cut your steak into slices and place on top of your cheesy toasts. Garnish with dollop of pesto on each toast, and violla! You’ve got yourself the perfect appetizer or side for Friendsgiving.
