There are so many things I love about summer in Chicago – sunny days, patio season (hallelujah!), and a new tradition Tom and I have of inviting friends over for dinner at least once a week. It’s become a weekly occurrence for us to call up our friends and whip up a new dish and cocktail for them to help us taste test (plus, Tom got a new grill so he’s been extra enthusiastic about testing it out!) We’ve gotten into a nice groove of waking up on Sunday morning, heading over to the Logan Square farmer’s market, and picking our evening menu based on local ingredients that are in season. Tom usually makes the meal, and I’ll contribute with a side salad and cocktail. It’s turned into something I look forward to every week, and now instead of Sunday’s giving me the scaries, I’m a little more excited about taste-testing something new for dinner. This past weekend, we grabbed some seasonal produce and I whipped up a tasty summer berry mojito recipe made with TILL Vodka made with fresh blueberries and raspberries from the farmer’s market. Since I was using fresh berries – vodka vs. rum seemed like the best choice (and believe me, this cocktail tastes just as good as it looks!). If you’re looking for the perfect, seasonal cocktail to impress your friends – this vodka berry mojito fits the bill!
Here’s what you need to make one for yourself (and a friend!)
Makes 2 servings
Ingredients:
- 2 tablespoons fresh blueberries
- 2 tablespoons fresh raspberries
- 6 sprigs of fresh mint for muddling
- 2 lime wedges (I used 1 quarter for each drink)
- 4 oz. of TILL Vodka
- Ice
- Seltzer water
- A sprig of mint and lime for garnish
How to Make:
For each cocktail, add 1 tablespoon of blueberries, raspberries and 3 leaves of fresh basil at the bottom of your glass. Muddle the ingredients until the berries are crushed and aromatic of mint. Once muddled, squeeze in a quarter of lime and drop into your cocktail for extra flavor. Add 2 ounces of TILL Vodka on your muddled mixture.
Top with ice and fill to the top with seltzer water for some extra fizz. I topped my finished cocktail with a cocktail skewer with raspberries, blueberries and topped with a fresh mint sprig. If you’re looking to add a little more sweetness to your drink, you can always add a dash of simple syrup or make sugar the rim before you start mixing in your ingredients. I like a more tart cocktail so I didn’t add anything extra to it, but it’s tasty with a little extra sugar too! And voila! How yummy does that cocktail look? It’s perfect for summer and I love that you can add some seasonal ingredients there to make it even tastier. Plus, our local farmers can always use some love 🙂
